Every time I make a new no-churn ice cream flavor, my imagination bursts with more recipe ideas. I can’t help but be inspired and I’m totally rolling with it! In this case, my no-churn s’mores ice cream recipe got me thinking about how amazing it would be in ice cream cake form.  And because you probably know by now that I cannot resist a s’more under any circumstances, making this s’mores ice cream cake recipe shot to the top of my list of things to try.  I am beyond happy with how it turned out! Just look at this beauty:

This s’mores ice cream cake is what my dreams are made of. It starts with an extra thick no-bake graham cracker crust pressed into the bottom of a springform pan. Then, you’ll add layers of hot fudge, no-churn chocolate ice cream, graham cracker crumbles, and no-churn toasted marshmallow ice cream. The layers look so pretty all together and the flavor is insanely good! If you love s’mores and you love ice cream, this cake will be what your dreams are made of too.

Let’s talk about these ice cream layers. They both begin with the same batch of no-churn ice cream base, which then gets divided into two separate bowls to create two different flavors. One half gets flavored with melted semi-sweet chocolate to create an amazingly simple (yet delicious) chocolate ice cream. The other half is infused with marshmallow fluff before folding in toasted mini marshmallows. After about 6 hours in the freezer, each of these layers becomes the perfect ice cream texture like magic! It’s the easiest way to make ice cream ever and blows my mind every single time.

The hot fudge sauce is homemade in this recipe, but you can absolutely use store bought hot fudge as an alternative. If you do, I recommend Hershey’s brand or any brand that you already know you love. It’s important to have a good quality hot fudge here to tie the marshmallow and graham cracker flavors together.

The layers in this cake are beautiful all on their own, which means you really don’t have to decorate after assembling and freezing it. I chose to add a half drip with the homemade hot fudge that I had leftover and tossed on some more graham crackers and toasted mini marshmallows. Once the cake sets and you reveal those layers though, I completely understand if you’d rather just dig in than add anything extra!

S’mores Ice Cream Cake

Layers of no-bake graham cracker crust, homemade hot fudge, chocolate ice cream, and toasted marshmallow ice cream. This is what s'mores lovers dreams are made of!
Prep Time 20 minutes
Freezing Time 6 hours
Servings 15 servings

Ingredients

Hot Fudge Sauce

  • 2/3 Cup (160ml) heavy whipping cream
  • 2 Tbsp (30ml) light corn syrup*
  • 1/3 Cup (66g) granulated sugar
  • 1/3 Cup (75g) unsalted butter
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt
  • 4 Oz (117g) semi-sweet chocolate chips
  • 2 Tbsp unsweetened natural cocoa powder

Graham Cracker Crust

  • 1 1/4 Cups (130g) graham cracker crumbs
  • 2 Tbsp (25g) granulated sugar
  • 5 Tbsp (70g) unsalted butter, melted

S'mores Ice Cream Layers

  • 1/2 Cup (88g) semi-sweet chocolate chips
  • 2 Cups (480ml) heavy whipping cream, cold
  • 2 tsp pure vanilla extract
  • 14 Oz sweetened condensed milk, divided
  • 1/4 Cup (20g) marshmallow fluff
  • 1 1/2 Cups (75g) mini marshmallows, toasted**

Additional Fillings & Toppings

  • 1/2 Cup graham cracker crumbs
  • 1/4 Cup toasted mini marshmallows

Instructions

Make the Hot Fudge Sauce

  • In a medium saucepan over medium heat, combine the heavy whipping cream, corn syrup, sugar, salt, butter, and vanilla. Whisk constantly until the butter is fully melted and the mixture begins to simmer.
  • Reduce heat to medium-low and add the chocolate chips. Stir until melted.
  • Whisk in the cocoa powder and continue to cook on low until fully incorporated and glossy, about 1 minute.
  • Place the hot fudge into an airtight container and store in the refrigerator until room temperature, 20-30 minutes. It will thicken significantly as it cools.

Prepare the Graham Cracker Crust

  • In a small bowl, combine the graham cracker crumbs and granulated sugar, then pour in the melted butter. Mix well until all the ingredients are fully combined. Place a 6-inch cardboard cake circle into the bottom of a 6-inch springform pan, then use a glass jar or cup to press the graham cracker crust evenly on top of the cardboard cake circle and into the sides of the pan. Refrigerate the crust in the springform pan until you're ready to assemble the ice cream cake.

Make the S'mores Ice Cream Layers

  • Wait to make the ice cream layers until right before you're ready to assemble the cake. Place a large metal or glass bowl into the refrigerator for at least 20 minutes to chill before you get started.
  • Melt the semi-sweet chocolate chips in the microwave in 20-second intervals, stirring after each one until the chocolate chips are fully melted. Allow to cool completely to room temperature, about 15-20 minutes.
  • Add the heavy whipping cream and 2 teaspoons of the vanilla extract into the chilled bowl, then whip it with a hand mixer on high speed until stiff peaks form, 3-4 minutes. You can alternatively use a stand mixer with the whisk attachment for this part. Place the whipped cream into the refrigerator while you move on to the next step.
  • Divide the sweetened condensed milk evenly between two medium bowls. To one bowl, whisk in the melted and cooled semi-sweet chocolate. To the second bowl, whisk in the marshmallow fluff.
  • Divide the whipping cream evenly between the two bowls you created in the previous step. Fold each sweetened condensed milk mixture together with the divided whipped cream to create chocolate ice cream and marshmallow ice cream. Fold the toasted mini marshmallows into the marshmallow ice cream mixture.

Assembly

  • Un-latch the springform pan and place a sheet of acetate between the outer edge of the graham cracker crust and the inside of the pan. Re-latch the springform pan and tape the acetate together once it's the same diameter as the pie crust. Here are more detailed instructions on how to prepare the acetate collar.
  • Reserve about 1/3 Cup of hot fudge sauce for the decorative drip, then pour the rest onto the graham cracker crust. Smooth with a rubber spatula to create an even layer. Add the chocolate ice cream on top of the hot fudge layer and smooth with a rubber spatula.
  • Add about 1/3 Cup of the crumbled graham crackers on top of the chocolate ice cream before adding the marshmallow ice cream on top and smoothing it down with a rubber spatula.
  • Freeze the s'mores ice cream cake for at least 6 hours. When you're ready to serve it, remove the cake from the springform pan and unwrap the acetate. Re-heat the hot fudge sauce in the microwave in 10-second intervals until it reaches room temperature, then use it to create a decorative half drip around the top edge of the cake. Garnish with more graham cracker crumbs and toasted mini marshmallows.

Notes

*The light corn syrup in the hot fudge recipe is optional, but it does help keep the fudge filling softer when frozen. I do recommend it, but you are safe to omit it if you want. 
**To toast the mini marshmallows: Line a baking sheet with aluminum foil and spray it with baking spray, then add the mini marshmallows in a single layer. I used a butane kitchen torch to toast the marshmallows from here, but you can alternatively place the marshmallows under the broiler in your oven. Keep a close eye on them to make sure they don’t get too burnt. 
Make Ahead Tips: 
  1. The hot fudge can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, gently reheat it in the microwave in 10 second intervals until spreadable. 
  2. The graham cracker crust can be made ahead and stored in the freezer for up to 2 months. Place a piece of plastic wrap over the top of the crust followed by a piece of aluminum foil and store it in the springform pan to keep it fresh. 
  3. The ice cream layers must be made right before assembling the cake and cannot be made ahead. 
  4. The assembled cake or leftovers can be stored in the freezer, wrapped in acetate or plastic wrap, for up to two months.

It’s finally starting to get hot here in Portland, which means less wanting to use the oven and way more ice cream cravings. Ever since I learned how to make ice cream the easy way (no-churn), my imagination has been bursting with flavor ideas that keep making their way to my must-try list. And since s’mores are one of my all time favorite flavors, it was only a matter of time before I attempted to create the iconic summer treat in ice cream form. It was so much fun to make and SO DELICIOUS.

This is the ultimate no-churn s’mores ice cream recipe: a graham cracker ice cream base, toasted mini marshmallows and graham cracker chunks throughout, and ribbons of fudge and marshmallow creme. It is almost too good to share! The best part is, it’s extremely easy to toss together. Just ten minutes, a hand mixer or stand mixer with the whisk attachment, a loaf pan, and a few simple ingredients. You don’t even need an ice cream maker!

It all starts with some heavy whipping cream that you’ll whip with a hand mixer or stand mixer with the whisk attachment until stiff peaks form. This is the base of every no-churn ice cream. To flavor it, you’ll add sweetened condensed milk, a little vanilla, and crushed graham crackers. Once you fold those together, you’ll end up with a delicious graham cracker ice cream before adding in the rest of the fixings.

To toast the mini marshmallows, I love using my butane kitchen torch. I line a baking sheet with aluminum foil, coat it with a little baking spray, and add the marshmallows on top before torching away. Alternatively, you can use the broiler setting on your oven to toast the marshmallows. Just remember to keep an eye on them if you do – they toast very quickly under a broiler! If you like your marshmallows a little burnt, don’t even worry about it.

For the fudge ribbon, I used Hershey’s hot fudge sauce, but you could use any brand that you love or make your own from scratch. If you’re looking for a good from-scratch recipe, I recommend this one from my mint chocolate chip ice cream cake recipe. It’s my favorite homemade hot fudge recipe and would taste amazing in this ice cream, but absolutely feel free to use a store bought option like I did.

Since I am such a s’mores fanatic (see also my S’mores Cake Recipe and S’mores Cupcake Recipe), I made sure that this ice cream has s’mores components in every single bite. It is unbelievably decadent, smooth, and nostalgic. It’s my favorite ice cream I’ve made thus far and I cannot wait for you to make it and experience the magic yourself. No-Churn S’mores Ice Cream Recipe

The ultimate s'mores ice cream: graham cracker infused ice cream with toasted marshmallows, graham cracker chunks, and ribbons of fudge and marshmallow creme. No ice cream maker necessary!
Prep Time 15 minutes
Freeze Time 6 hours
Servings 6 Cups (12 servings)

Ingredients

  • 1 1/2 Cups (75g) mini marshmallows, toasted
  • 9 graham crackers, divided
  • 2 Cups (480ml) heavy whipping cream
  • 14 Oz sweetened condensed milk
  • 2 tsp pure vanilla extract
  • 1/2 Cup (120ml) hot fudge sauce, cold
  • 1/4 Cup (20g) marshmallow creme

Instructions

  • Place a large metal or glass bowl into the refrigerator for at least 20 minutes to chill before you get started.
  • Toast the Marshmallows: Line a baking sheet with aluminum foil and coat it with baking spray before adding the mini marshmallows in a single layer. Use a butane torch to toast the mini marshmallows. Alternatively you can toast the marshmallows under the broiler in your oven. If you do, watch them closely to make sure they don't burn. Set the toasted marshmallows aside to cool completely.
  • Prepare the Graham Crackers: Use a food processor to finely crush half of the graham crackers (4 1/2 whole graham crackers or 9 squares). Set aside. Crumble the remaining graham crackers by hand into bite sized pieces and set aside.
  • Add the heavy whipping cream into the chilled bowl, then whip it with a hand mixer on high speed until stiff peaks form, 2-3 minutes. You can alternatively use a stand mixer with the whisk attachment for this part.
  • In a separate small bowl, whisk together the sweetened condensed milk, vanilla extract, and finely crushed graham crackers. Gently fold the sweetened condensed milk mixture into the heavy whipping cream with a rubber spatula. Reserve about 1/8 Cup of toasted marshmallows and about 1/8 Cup of crumbled graham crackers, then fold the rest of the toasted marshmallows and crumbled graham crackers into the ice cream mixture.
  • Pour half of the ice cream mixture into a 9x5x3 inch metal loaf pan. Add half of the hot fudge sauce and use a butter knife to swirl it around. Drop the marshmallow creme by the spoonful, 1-2 inches apart, on top of the fudge swirl. Add the rest of the graham cracker ice cream mixture on top.
  • Add the remaining hot fudge sauce on top and use a butter knife to swirl it around. Add the reserved crumbled graham crackers and toasted marshmallows, then cover with aluminum foil and freeze until solid and scoopable, 5-6 hours.

Notes

Storage tips: This s’mores ice cream is best stored in an airtight container in the freezer. It will last for several months (if you can make it last that long).

I can’t tell you how many requests I’ve gotten for a cupcake version of my S’mores Cake with Toasted Marshmallow Buttercream. It’s one of my all-time favorite recipes (s’mores fan to the core, here!) and there are so many amazing flavors going on in it: graham cracker cake, decadent chocolate, toasted marshmallow buttercream. I had to get a little creative to capture the magic of these flavors in cupcake form, and I am so happy with how they turned out. Behold!

These S’mores Cupcakes have a lot going on, but every step is totally worth the amazing flavor. It all starts with a graham cracker flavored cupcake baked on top of a graham cracker crust (my husband’s idea, and it is so genius). You basically mix up a quick graham cracker crust and press a spoonful of it into the bottom of the cupcake tin before adding the cupcake batter on top. Although the cupcake batter is already flavored with graham cracker crumbs, the crust adds the perfect amount of texture and really takes the graham cracker flavor to the next level!

After those tasty graham cracker cupcakes cooled, I filled them with marshmallow fluff and frosted them with my favorite chocolate buttercream. And since one thing I really loved about the S’mores Cake I made last year was the piped and toasted meringue, I decided to use that same technique to top these cupcakes! The marshmallow meringue recipe below is the perfect piping consistency, and toasting it is my favorite part of the whole recipe.

If you don’t feel like going the extra mile to make marshmallow meringue, you can totally top these with a regular ol’ marshmallow and toast it with a culinary torch. The marshmallow meringue is so pretty and tasty, but it is the only thing in this recipe that can’t be made ahead of time. That being said, if you do decide to spend that extra 10 minutes making the meringue (worth it!), make sure you whip it up right before you’re gonna pipe it on. After you toast it, the meringue holds its shape for two days, whether it’s at room temp or refrigerated.

Whether you’re a hardcore s’mores fan or you’re making these for someone else who is, they are sure to please. Between the gooey marshmallow, the graham cracker cupcake, and the perfect hit of chocolate, these beauties are a little bit of s’mores heaven. Enjoy!

Toasted S’mores Cupcakes

Graham Cracker Cupcakes filled with Marshmallow Fluff, topped with Chocolate Buttercream and Toasted Marshmallow Meringue – the perfect S'mores Cupcakes!
Prep Time 40 minutes
Cook Time 17 minutes
Servings 14 cupcakes

Ingredients

Graham Cracker Crust

  • 1/2 Cup (52g) graham crackers, ground into crumbs
  • 2 Tbsp white granulated sugar
  • 2 Tbsp unsalted butter, melted

Graham Cracker Cupcakes

  • 1/2 Cup (52g) graham crackers, ground into crumbs
  • 1 1/4 Cups (133g) cake flour, sifted before measuring
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 Cup (71g) unsalted butter, room temperature
  • 2/3 Cup (137g) granulated white sugar
  • 1 egg + 1 egg yolk, room temperature
  • 1/2 tsp vanilla extract
  • 1/2 Cup (120ml) whole milk, room temperature

Marshmallow Filling

  • 1/3 Cup Marshmallow Fluff

Chocolate Buttercream

  • 1/2 Cup (113g) unsalted butter, room temperature
  • 1 1/2 Cups (180g) powdered sugar
  • 1/4 Cup (21g) natural unsweetened cocoa powder
  • 2 Tbsp whole milk, room temperature
  • 1 tsp vanilla extract
  • pinch of salt

Marshmallow Meringue Topping

  • 3 large egg whites, room temperature
  • 3/4 Cup (150g) granulated white sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

Make The Graham Cracker Crust

  • In a small bowl, stir together the graham cracker crumbs and granulated sugar. Add the melted butter and mix until well incorporated.

Make The Graham Cracker Cupcakes

  • Preheat the oven to 350˚F and line a muffin pan or cupcake pan with liners. Press a spoonful of the Graham Cracker Crust into the bottom of each cupcake liner.
  • In a medium sized bowl, add the graham cracker crumbs, sifted cake flour, baking powder, baking soda, and salt. Whisk to combine and set aside.
  • In the bowl of a stand mixer with the paddle attachment, cream butter for one minute on high. Scrape down the bowl and paddle and add the sugar. Cream together on high for two minutes, scraping down the bowl and paddle once in between. Turn the mixer to low and add the egg and egg yolk until combined.
  • Add vanilla and mix on medium for one minute. Turn the mixer to low and add all of the dry ingredients at once until just combined, then add the milk all at once. Scrape down the bowl and paddle once more and mix on low for about 30 seconds. Do not overmix.  
  • Pour batter on top of the graham cracker crust bottomed liners to fill no more than ⅔ full. Bake for 17 minutes or until a toothpick inserted comes out clean. Cool completely before filling or frosting.

Make The Chocolate Buttercream

  • In a stand mixer fitted with a paddle attachment, whip butter on medium speed until creamy and light in color, about four minutes. Scrape down the bowl and paddle and turn the mixer to low, then add powdered sugar, cocoa powder, milk, salt, and vanilla extract. Increase the speed to medium and beat for one full minute.

Make The Marshmallow Meringue

  • Whisk the egg whites, sugar, and cream of tartar together in a small heatproof bowl. Set the bowl over a saucepan filled with an inch or two of simmering water, making sure the bottom of the bowl doesn’t touch the water (or else it will cook your eggs!). Whisk the mixture constantly until the sugar has dissolved, about 4 minutes.
  • Once the sugar has dissolved, pour the mixture into the bowl of your stand mixer fitted with the whisk attachment. Add the vanilla and whisk the mixture on high for 6 full minutes, until stiff peaks form. You should be able to dip the whisk into the meringue and it forms a peak that maintains its shape when turned right side up and upside down.

Assembly

  • Once the Graham Cracker Cupcakes are cooled, cut out the centers using a knife or inverted large piping tip. Fill the empty centers with Marshmallow Fluff. Fit a piping bag with Wilton tip 1M and fill it with Chocolate Buttercream, then pipe a swirl of chocolate buttercream on top of each cupcake. Sprinkle with graham cracker crumbs.
  • To get the look pictured, fit one piping bag with Wilton Tip 1M and another with Wilton Tip 4B. Fill both piping bags with Marshmallow Meringue. Pipe a small swirl with Wilton Tip 1M on top of each cupcake, then pipe two stars next to each small meringue swirl with Wilton Tip 4B. Toast the meringue accents (carefully!) with a culinary torch.

Notes

Make Ahead Tips:
The Graham Cracker Cupcakes can be made ahead and stored in an airtight container at room temperature for up to one day. Alternatively, you can place them in the freezer in an airtight container for up to one month before thawing and using. 
The Chocolate Buttercream can be made ahead and stored in an airtight container at room temperature for up to 1 day. Alternatively, you can store it in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to room temperature and rewhip with your stand mixer to bring back to frosting consistency. 
The Marshmallow Meringue cannot be made ahead and must be made right before you’re ready to pipe and torch it.

There’s something about me you’ve got to know: I really really love s’mores. I had my first one as a kid sitting around a crackling campfire under the stars and have been hooked ever since. There’s something about a perfectly toasted marshmallow, melty milk chocolate, and crunchy graham crackers that just gets me all shook up. Since discovering this fun little fact about me, my mother-in-law keeps her pantry stocked year-round with all the s’mores essentials to make sure I can have them any time I come over. No matter what time of year, you’ll find stacks of Hershey’s bars, jet puffed marshmallows, and honey graham crackers tucked away in my very own corner of her pantry and it makes me feel very known and loved. It was just a given that I would turn these flavors into a cake, and it’s one of the very first recipes I sought to master.

The s’mores cake I’ve created goes like this: layers of graham cracker cake filled with toasted(!) marshmallow buttercream and milk chocolate ganache, topped with vanilla buttercream, a milk chocolate drip, and toasted marshmallow meringue flourishes. Phew. Sounds like heaven right? If you love s’mores, it really is. It’s been one of my most requested flavors to date, and based on the reviews I’ve heard I wouldn’t hesitate to call it a true crowd pleaser.

There are a whole lot of yummy flavors going on in this cake, but I think the real kicker comes from the toasted marshmallow buttercream. It involves mixing in some Marshmallow Fluff and jet puffed marshmallows that have been toasted in the oven, so you get a bit of that smokey, marshmallowy taste that will remind you of a campfire. Paired with the graham cracker cake and milk chocolate ganache, I’d say it’s the closest match to a real s’mores you’re going to find in cake form.

To make sure you get the purest s’mores taste with each bite of this cake, I layer the toasted marshmallow buttercream with chocolate ganache as a double filling. That way you get a little bit of everything all at once, just like the real deal. And it makes for really pretty slices too.

I’m a big fan of highlighting the flavors of the cake by decorating with crushed graham crackers, a milk chocolate ganache drip, and toasted marshmallow meringue flourishes. I use Wilton tips 1M and 4B to pipe the meringue before toasting, and I love how this recipe holds its shape. Years ago I tried this same technique with marshmallow fluff and it did not hold its shape for more than ten seconds, then afterwards melted into a puddle of white goo. It was a heartbreaking situation, but it’s what led me to discover my absolute favorite marshmallow meringue recipe and I haven’t ever looked back. It’s super easy to make, pipes like a dream, and looks gorgeous when it’s toasted.

If you’re on the fence about getting a good culinary torch, let me tell you, it makes all the difference for toasted desserts. I’ve been using this micro butane culinary torch for the past year and it’s worked wonders, plus it’s under $20 which is a complete steal. Toasting the meringue flourishes is the perfect final touch for this recipe, and it’s absolutely my favorite part.

S’mores Cake Recipe

Layers of graham cracker cake filled with toasted marshmallow buttercream and rich milk chocolate ganache, topped with vanilla buttercream and garnished with toasted marshmallow meringue flourishes. 

Ingredients

Graham Cracker Cake

  • 1 1/2 cups (155g) graham crackers, ground into crumbs
  • 3 3/4 cups (398g) cake flour, sifted before measuring
  • 1 Tbsp baking powder
  • 3/4 tsp baking soda
  • 1 1/2 tsp salt
  • 1 1/8 cups (254g) unsalted butter, room temperature
  • 2 cups (410g) granulated sugar
  • 5 large eggs, room temperature
  • 1 1/2 Tbsp vanilla extract
  • 1/2 cup (112g) sour cream, room temperature
  • 1 1/2 cup (360ml) whole milk, room temperature

Toasted Marshmallow Buttercream

  • 8 large marshmallows
  • 1/2 cup (113g) unsalted butter, room temperature
  • 1/2 cup (60g) powdered sugar
  • 1/2 tsp vanilla extract
  • 3.5 oz (half a small jar) Marshmallow Fluff
  • 1/4 tsp salt

Milk Chocolate Ganache

  • 1 cup (183g) milk chocolate chips
  • 1/2 cup (120ml) heavy whipping cream

Vanilla Buttercream

  • 2 cups (452g) unsalted butter, room temperature
  • 7 cups (840g) powdered sugar
  • 4 Tbsp (59ml) whole milk, room temperature
  • 4 tsp vanilla extract
  • 1/4 tsp salt

Marshmallow Meringue Topping

  • 3 large egg whites, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

Make The Graham Cracker Cake

  • Preheat the oven to 350˚F and prepare three 8-inch or four 6-inch cake pans by spraying the sides with cooking spray and fitting a parchment or wax paper circle to the bottom of each pan. 
  • Grind the graham crackers into a crumbs by either using a food processor or placing them into a large ziplock back and crushing them with a rolling pin. Place the graham cracker crumbs into a medium sized bowl and add the sifted cake flour, baking powder, baking soda, and salt. Whisk to combine and set aside. 
  • In the bowl of a stand mixer with the paddle attachment, cream butter for one minute on high. Scrape down the bowl and paddle and add the sugar. Cream together on high for two minutes, scraping down bowl and paddle once in between. Turn mixer to low and add the eggs, one at a time, scraping down bowl and paddle as necessary. Once all eggs are added, turn the mixer to high and beat for three minutes. 
  • Add vanilla and sour cream and continue mixing for one minute. Turn the mixer to low and add all of the dry ingredients at once until just combined, then add the milk all at once. Scrape down the bowl and paddle once more and mix on low for about 30 seconds. Do not overmix.
    Pour batter into prepared pans (about ⅔ full). 
  • Bake for 35-45 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes for five minutes before releasing from the pan and continuing to cool on a baking sheet or wire rack.

Make The Milk Chocolate Ganache

  • Place chocolate chips in a heatproof bowl. In a saucepan over medium-high heat, whisk heavy whipping cream constantly until you start to see the beginnings of a boil. Just before it begins to form a rolling boil, remove the cream from the heat and pour over chocolate chips. Let the mixture sit for about 30 seconds, then whisk it all together until smooth and uniform in consistency. Cool the ganache on the counter until it reaches room temperature before using in/on the cake.  

Make The Toasted Marshmallow Buttercream

  • Line a baking sheet with aluminum foil and lightly spray the surface of the foil with cooking spray. Place your marshmallows on the foil and set in the center rack of the oven. Broil the marshmallows on high until they start to brown on top (watch them closely!), then flip them over so they can brown on the bottom as well. When both sides are toasted, take them out of the oven to cool.
  • In a stand mixer with the paddle attachment, whip the butter on medium until creamy and light in color, about 5 minutes. Add the powdered sugar and continue mixing on low for another 2 minutes, scraping down the bowl and paddle afterwards. Add the vanilla and beat on medium for 3 minutes, then add the marshmallow fluff, roasted marshmallows, and salt. Continue mixing on medium for another minute.

Make The Vanilla Buttercream

  • In a stand mixer with the paddle attachment, beat butter on high for until it’s fluffy and almost white in color, about 7 minutes, scraping down the bowl and paddle a few times during the process. Add the powdered sugar a few cups at a time and mix on medium until incorporated. Scrape down the bowl and paddle before each addition. Turn the mixer to low and add the vanilla extract, milk, and salt. Beat on medium for another minute until well incorporated, scraping down the bowl and paddle as needed.

Make The Marshmallow Meringue

  • Whisk the egg whites, sugar, and cream of tartar together in a small heatproof bowl. Set the bowl over a saucepan filled with an inch or two of simmering water, making sure the bottom of the bowl doesn’t touch the water (or else it will cook your eggs!). Whisk the mixture constantly until the sugar has dissolved, about 4 minutes. 
  • Once the sugar has dissolved, pour the mixture into the bowl of your stand mixer fitted with the whisk attachment. Add the vanilla and whisk the mixture on high for 6 full minutes, until stiff peaks form. You should be able to dip the whisk into the meringue and it forms a peak that maintains its shape when turned right side up and upside down. 

Assembly

  • Torte each layer of graham cracker cake to desired height. Pipe a circle of vanilla buttercream around the edge of the first layer to act as a buttercream dam. Fill the center of the circle with half chocolate ganache (room temperature or colder), and half toasted marshmallow buttercream. Place the next layer of graham cracker cake on top and repeat the filling process before placing the third layer on top.
  • Crumb coat the cake with vanilla buttercream and place it into the refrigerator for 15 minutes before topping with a final coat of vanilla buttercream. Garnish the cake with a chocolate ganache drip, graham cracker crumbs, and marshmallow meringue piping that’s been toasted with a culinary torch. Or decorate however your heart desires. 

Notes

Make ahead tips: the cake can be made ahead and stored at room temperature (wrapped in plastic wrap) for up to two days before frosting. Alternatively, you can wrap it in plastic wrap and store in the freezer for up to two months. 
The buttercreams can be made ahead of time and stored in airtight containers in the refrigerator for up to two weeks. When you’re ready to use them, bring them to room temperature and re-whip with the stand mixer if needed. 
The ganache can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring back to room temperature. You can microwave it in small (10-15 second) increments to get it back to drip consistency.
The marshmallow meringue cannot be made ahead and must be used/toasted as soon as you make it.
