I have a little confession to make: when I first started making cakes, my secret go-to for far too long was the box vanilla cake mix by Betty Crocker.

Phew. Now you know. 

Since I became accustomed to the light and fluffy texture of said box mix, every time I tried to make a vanilla cake from scratch, the result seemed off. Blame it on the lack of Propylene Glycol Mono (or the handful of other ingredients in box mixes that you’ve never heard of), but my from-scratch vanilla cakes always ended up too dense, tasted a little cornbread-ish, and just didn’t have that fluffy appeal. Finding a go-to vanilla cake recipe from scratch felt like a mountain I had to climb, but after (what felt like) five hundred tries and a whole lot of not giving up, I’ve found a recipe that is beyond my wildest cake dreams.

The secret to it’s perfect texture is the cake flour, which produces a much softer, fluffier cake than all-purpose because of its lower protein content (the more protein in your flour the stiffer the dough and less ability to maintain moisture). You can find cake flour at most grocery stores, but if all you’ve got is all-purpose flour in your pantry, here are instructions for how to make your own cake flour in a pinch.

To make this cake even more moist I’ve added a little sour cream for good measure. Trust me on this – sour cream is essential! There’s also an entire tablespoon of vanilla extract in there to really up the flavor, because yum. It pairs well with so many buttercream flavors, but if you want to keep things on the vanilla spectrum, try pairing it with this Vanilla Buttercream Recipe. It does not disappoint!

I whipped up a video to show you the process of making this vanilla cake recipe and share my favorite baking tips for success. Take a look before you dive in:

Update 2022: I slightly changed the measurements of these same ingredients to make this cake even more soft and light! The original recipe is in the video above just in case you are too in love with it to let it go. The main differences:

  • Instead of 3 large eggs, I now use 2 large eggs + 2 egg whites to make this cake lighter
  • I reduced the sugar slightly to prevent over-browning (but don’t worry, it still tastes perfectly sweet)
  • I reduced the butter and whole milk slightly to lighten the cake while keeping it extra moist with the sour cream
  • I reduced the leavening slightly because it doesn’t need the additional baking powder

Whew. That seems like a lot to change but trust me! The original was one of my very first blog recipes almost a handful of years ago. I’ve learned so much since then (always learning!) and after baking this revised recipe side-by-side with the original, I know you’re going to love these changes!

Perfect Vanilla Cake Recipe

An easy vanilla cake recipe that’s light, fluffy, and flavorful. It’s got the perfect texture you’ll find from box cake mixes, without all the ingredients you can’t pronounce. 
Prep Time 20 minutes
Cook Time 35 minutes
Total Time 55 minutes

Ingredients

  • 2 3/4 Cups (290g) sifted cake flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 Cup (170g) unsalted butter, room temperature
  • 1 1/2 Cups (300g) granulated white sugar
  • 2 large eggs + 2 egg whites, room temperature
  • 1/2 cup (120g) sour cream, room temperature
  • 1 Tbsp pure vanilla extract
  • 1 Cup (240ml) whole milk, room temperature

Instructions

  • Preheat the oven to 350°F. Prepare three 6-inch or two 9-inch cake pans by spraying the sides with a cooking spray (Baker's Joy is my favorite) and fitting a parchment paper circle to the bottom of the pan.
  • Sift the cake flour and then measure by spooning and leveling it in your measuring cup. Add the cake flour, baking powder, baking soda, and salt into a bowl and whisk to combine. Set aside. 
  • In the bowl of your stand mixer (a handheld mixer works fine too!), beat the butter on high for two minutes until it's light and creamy. Add in the sugar and continue to mix on medium-high for another two minutes. Turn the mixer to low and add the eggs and egg whites, one at a time, mixing until just combined and scraping down the bowl and paddle as needed. Add the vanilla and sour cream, turn the mixer to high, and beat for one full minute. It will look curdled at this point, but don’t worry – it will become smooth cake batter at the end.
  • Add in the dry ingredients all at once and turn the mixer to low speed. Mix until just combined, then slowly pour in the milk. Continue to mix on low speed until just combined, about 30 seconds. Scrape down the sides and bottom of the bowl and give it a few stirs with a whisk to make sure there are no lumps. The batter will be slightly thick.
  • Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes. They're done when they spring back to the touch and a toothpick inserted into the middle comes out clean. Let the cakes cool in the pan for five minutes before turning them out onto a wire rack for an additional few hours of cooling. Make sure they're entirely room temperature before applying any frosting.

*DIY Cake Flour Recipe: To make your own cake flour, spoon and level one cup of all-purpose flour and remove 2 Tbsp. Add 2 Tbsp of cornstarch. Repeat per the amount of cake flour you need, then sift the flour and cornstarch mixture 4 times (don’t skip that step!)After sifting, spoon and level to re-measure the amount of cake flour you need. 
Make ahead tip: These cakes can be baked, cooled, wrapped in plastic wrap, and left out at room temperature up to two days ahead of decorating. Unfrosted cake layers can be wrapped tightly in plastic wrap and stored in the freezer for up to two months before thawing and frosting.

Ever since I published my favorite fluffy Vanilla Cake Recipe, I’ve gotten lots of questions about how to make it eggless or full-on vegan. The truth is, I’d been wanting to make a vegan vanilla cake for years, but everything I read about vegan baking scared me into thinking it was going to be a huge mountain of recipe testing I was going to have to climb (spoiler alert: it was). Still, I kept it on my list, mainly because I wanted an option to offer those asking for the vegan version of my vanilla cake recipe. But it wasn’t until I had my son and had to cut out dairy shortly after that it moved from the bottom of the list to the top. I rolled up my sleeves, put on my apron, and began my absolute OBSESSION with creating the perfect, fluffy, easy, flavorful, can’t-even-tell-it’s-vegan cake recipe. I can say with assurance after what seems like a hundred recipe tests that this is the one.

During my recipe testing, I tried a few different vegan vanilla cake recipes to see what the methods, ingredients, and results were like. The problem that I kept running into was that they were so easy to overmix, resulting in a dense cake, plus they just didn’t have that perfect vanilla flavor and bakery-style fluffiness I was after. After weeks of testing and many failures, I decided to simply swap out the dairy in my Vanilla Cake Recipe with vegan ingredients – Earth Balance sticks for the butter, aquafaba for the eggs, and soy milk for the whole milk. I did have to tweak the leavening agents a bit, but once I got those figured out I just about squealed with delight when these layers came out of the oven!

This Vegan Vanilla Cake recipe is exactly what I was after: extra soft and fluffy, perfectly moist, beautiful vanilla flavor, and just a delight to eat for vegans and non-vegans alike. It tastes like something you’d find at your favorite bakery, yet it’s so simple to whip up and pair with your favorite frosting (it’s paired with my Vegan Vanilla Buttercream here). I enlisted some of my vegan friends and their kiddos to taste test and they all agreed that this cake is an absolute hit, which makes me all the more excited to share it with you.

What is Aquafaba? 

I had never heard of aquafaba before I started on this vegan cake recipe journey, so I wanted to take the time to explain what it is and why it’s used in this recipe. Basically, aquafaba (which is Italian for “bean juice”) is the juice from a can of chickpeas that acts as an egg replacer in vegan recipes.

Once whisked until foamy, the aquafaba acts as whole eggs in this cake recipe to bind the other ingredients together and create a little volume as well. And trust me, you cannot taste it at all. Quite miraculous if you ask me! 

Details on Decorating 

I decorated this cake using my Vegan Vanilla Buttercream recipe, which is super easy to add color to. I added a little AmeriColor Sky Blue to create a buttercream ombrè before decorating the sides with Fancy Sprinkles in the Roller Disco mix (also vegan!) and piped some swirls on the top with Wilton Tip 4B.

Vegan Vanilla Cake

Layers of soft, fluffy, and extra flavorful vegan vanilla cake, perfect for any vanilla cake fan (vegan or not)! The kind of cake you'd find at your favorite bakery, only homemade and super easy to whip up.
Prep Time 10 minutes
Cook Time 35 minutes

Ingredients

Vegan Vanilla Cake

  • 1 1/4 Cups (300ml) unsweetened soy milk, room temperature
  • 1 Tbsp white vinegar
  • 2 3/4 Cups (290g) cake flour, sifted before measuring* DIY recipe in notes
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 Cup (120ml) aquafaba** see notes
  • 1 Cup (227g) vegan butter, room temperature I use Earth Balance sticks
  • 1 3/4 Cups (355g) white granulated sugar
  • 1 1/2 Tbsp pure vanilla extract

Instructions

  • Preheat the oven to 350°F. Prepare three 6-inch or two 8-inch cake pans by spraying the sides with a cooking spray (Baker's Joy is my favorite) and a wax paper circle fitted to the bottom of the pan. Alternatively, you can grease and lightly flour the pans. 
  • Stir together the white vinegar and soy milk and set aside. Sift the cake flour and then measure by spooning and leveling it in your measuring cup. Add the cake flour, baking powder, and salt into a bowl and whisk to combine. Set aside. 
  • Make the Aquafaba: Pour the juice from a can of chickpeas into a medium sized bowl (either discard the actual chickpeas or store them to use in another recipe). Whisk the juice vigorously for one minute, after which it will look foamy. Set aside.
  • In the bowl of your stand mixer (a handheld mixer works fine too!), cream the vegan butter with the white granulated sugar for two minutes on medium-high, scraping down the bowl and paddle once in between. Measure out 1/2 Cup of the aquafaba (you can discard the rest) and add it along with the vanilla extract. Mix on medium for one minute. The mixture may look curdled at this point, but don't worry – it will all come together in the next step!
  • With the mixer on low speed, add in the dry ingredients and mix until just combined, then add the soy milk mixture in a steady stream and mix until just incorporated. Scrape down the sides and bottom of the bowl and give it a few more stirs to combine (without over-mixing). A few lumps are ok. The batter will be slightly thick, but pourable.
  • Pour batter evenly into prepared cake pans (no more than 2/3 of the way full) and bake for 30-35 minutes. They're done when they spring back to the touch and a toothpick inserted into the middle comes out clean. Let the cakes cool in the pan for five minutes before turning them out onto a wire rack for an additional few hours of cooling. Make sure they're entirely room temperature before applying any frosting.

I’ve tested a ton of buttercream recipes in my day, but my go-to is a super simple American buttercream recipe that I’ve tweaked to my liking. I’ve used this recipe for frosting countless cakes and cupcakes and I’m a big believer that a good vanilla buttercream is something every baker should have in their recipe box. There’s nothing fancy about the way this recipe is made, but it will certainly taste like you whipped up something special!

Making sure you use a good quality vanilla extract or paste is one of the secrets to success. You can use any kind of vanilla extract or paste, but I always use bourbon vanilla (I get mine from Trader Joe’s!) to give it a rich vanilla flavor. The other secret to success? Room temperature everything. That means taking the milk and butter out and letting them come to room temperature for about a half hour to an hour before you start any mixing.

Vanilla Buttercream

A rich, flavorful vanilla buttercream that is so easy to whip up, but tastes like you made something special. 
Prep Time 20 minutes
Total Time 20 minutes
Servings 3 cups

Ingredients

  • 1 cup (226g) unsalted butter, room temperature
  • 3 1/2 cups (420g) powdered sugar, sifted
  • 2 tsp vanilla extract
  • 2 Tbsp whole milk or heavy whipping cream, room temperature
  • 1/4 tsp salt, or to taste

Instructions

  • With a hand mixer or paddle attachment on your stand mixer, cream the butter on medium-high until it’s creamy and light (almost white) in color. About 7 minutes. 
  • With the mixer on low, add the sifted powdered sugar one cup at a time, scraping down after each addition and making sure each cup is fully incorporated before adding the next one. 
  • Add vanilla, milk, and salt and mix on low for another minute until fully incorporated. 

Notes

Make Ahead Tips: This buttercream can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to room temperature and re-whip in your stand mixer to bring back to smooth buttercream consistency. 
To Make It Vegan: substitute an equal amount of vegan butter (I love Earth Balance Sticks) for the unsalted butter, use 1 Tbsp dairy-free milk instead of 2 Tbsp whole milk (my favorite is unsweetened coconut milk), and omit the salt. 
To Make It Extra White: After all ingredients have been incorporated, add 1-2 tsp of Americolor Bright White or icing whitener of your choice.  
Yield: This buttercream makes enough to:
  • Frost 12-15 cupcakes with a piping bag
  • Fill and crumb coat a three-layer 6-inch cake or two-layer 8-inch cake. To have enough for frosting and decorating as well, double the recipe. 

Tips for the best buttercream consistency

There are three types of consistency for buttercream that you need to know, and each one plays a different role in cake decorating.

Medium Consistency

This is the most versatile of all consistencies. It works perfectly as a filling between layers, crumb coating, frosting a cake (especially if you want a smooth buttercream finish), and even decorating cupcakes with simple piping tips. This buttercream recipe is medium consistency as-is, so it’s super easy to spread smoothly onto cakes. To test and make sure you’ve got a medium consistency going, you should be able to dip your rubber spatula into the buttercream and it will come out with soft peaks and spread easily when you move your finger over it.

Thin Consistency

This is the perfect consistency for painting with buttercream or writing a message on your cake. To achieve it, just add 1-2 additional teaspoons of room temperature milk to thin out the buttercream. 

Stiff Consistency

If you’re piping buttercream flowers, especially ones with petals that need to stand upright, you’ll need a stiff consistency. Add an extra 1/2 cup of powdered sugar per batch of the above recipe to achieve this. When you dip your rubber spatula into the frosting, it should come out with stiff peaks, but when you pipe with it, make sure it’s not so thick that you have to put a ton of extra pressure on the bag or clog the piping tip. If you’re running into these problems, fear not! You can tone it down by adding room temperature whole milk, 1 tsp at a time, until it’s just right.

Whether you’ve been baking for awhile or you’re new to the game, there are a few go-to recipes I recommend having in your recipe box. I believe one of them should be a fail-proof vanilla cupcake recipe, and this one is just that. These babies come out the same every single time: fluffy, moist, rich vanilla flavor, and perfectly soft structure. And they’re so versatile, you can top them with just about any buttercream flavor and be good to go!

Before inventing this recipe, I was very co-dependant on Betty Crocker box mixes for cupcakes (and cake!). That stuff is just so trustworthy, which was exactly what I was lacking from scratch recipes I’d tried. Usually, I’d try a from-scratch recipe and find that the cupcakes had sunken in the middle, had a weird cornbread-ish taste, were too dry, and just lacked luster. So I spent countless hours concocting the perfect ratio of moisture, fluffiness, flavor, and magic.

The soft texture of these cupcakes comes from a balance of incorporating cake flour and extra moisture. Cake flour has a lower protein content than all-purpose flour, which means the batter is able to retain more moisture (the higher the protein content, the less ability to retain moisture, aka the drier the cake). That being said, the cake flour makes sure that none of the extra moisture from ingredients like sour cream, egg yolks, and whole milk go to waste. The result? A dreamy, melt-in-your mouth texture that’s soft as box mix, only without all the ingredients in a box mix you can’t pronounce. I’ve got all the heart eyes.

You can pair these cupcakes with just about any buttercream flavor, but the buttercream I’ve used in these photos is my go-to vanilla buttercream recipe. Check that recipe out if you have yet to find the perfect American buttercream recipe for topping cakes and cupcakes! I’ve used my Wilton tip 1M to frost a ruffled swirl and topped the cupcakes with Fancy Sprinkles in the Roller Disco mix. I love this look (it’s a classic!) but if you want more inspiration on how to frost cupcakes, here are 10 of my favorite ideas.

  • 1 3/4 cup (350g) granulated white sugar
  • 3 eggs, room temperature
  • 1/2 cup (120g) sour cream, room temperature
  • 1 Tbsp pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature

Instructions

  • Preheat the oven to 350°F. Prepare a muffin pan by lining with cupcake tins. 
  • Sift the cake flour first, then measure it out by spooning and leveling it in your measuring cup. Add the cake flour, baking powder, baking soda, and salt into a bowl and whisk to combine. Set aside. 
  • In the bowl of your stand mixer (a handheld mixer works fine too!), cream the butter for on high for two minutes until it’s light and fluffy. Add in sugar and continue to mix on high for another two minutes, scraping down the bowl and paddle as needed. Add the eggs one at a time, mixing thoroughly after each addition. Add vanilla and sour cream and mix for one minute on high, scraping down the bowl and paddle once more.
  • With the mixer on low speed, add in the dry ingredients and mix until just combined. Add the milk slowly and mix until just incorporated. Scrape down the sides and bottom of the bowl and give it a few stirs to make sure there are no lumps (without over-mixing). The batter will be slightly thick.
  • Spoon batter into the cupcake tins until they’re about ⅔ full, then bake for 17 minutes. They’re done when they spring back to the touch and a toothpick inserted into the middle comes out clean. Let the cupcakes cool in the pan for five minutes before removing them from the pan and continuing to cool them for at least an hour. Make sure they’re entirely room temperature before applying any frosting.

Huzzah! It’s my birthday! Well, technically it was last week but I’m still celebrating. I’m a whopping 32 years old now, and although I usually dread birthdays because of the whole getting older thing, this year I’m feeling pretty content. I’ve gotten to spend a lot of time with my very most favorite people, and I’m feeling so truly loved that I just can’t complain.

When you’re a caker it’s quite common to make your own birthday cakes, and this year was no exception. I thought about making something classic and reminiscent of my childhood (like yellow cake with chocolate frosting, the all-time favorite of my youth) but then I thought, why not use my birthday as an excuse to pair some flavors I love in a way that I’ve never done before? Even if it didn’t turn out right, it could be a good laugh. But spoiler alert: it turned out real good!

One of my all-time favorite desserts is Baked Alaska from a restaurant called Papa Haydn. The dessert is about a foot tall, and it involves layers of dulce de leche and banana ice creams, chocolate ganache, and vanilla sponge cake, all topped with toasted Italian meringue. It’s different than a traditional Baked Alaska because of the ice cream flavors – the classic Baked Alaska involves Neapolitan ice cream instead of the dulce de leche and banana combo that Papa Haydn has created. I love what they’ve done with the flavor pairings though, and I get the same thing almost every time I go.

I thought about trying to replicate the Baked Alaska in it’s true form, but since I’ve never actually made ice cream and don’t really have the right equipment yet, I decided to pull some inspiration from the flavors of my favorite Baked Alaska and then add some new ones. What I ended up with was a spiced banana cake with vanilla buttercream, drizzled with Nutella ganache and topped with toasted meringue flourishes. It ended up being real pretty and so tasty! Pair it with a little ice cream if you’re feeling fancy and you’ll have yourself a time.

To get the perfect banana flavor, you’ve got to start with bananas that are nice and spotted. That means you either have to plan ahead and buy your bananas about a week before making this cake, or store some spotted bananas in the freezer until the time is right. The more over-ripe (spotty) the bananas are, the more banana flavor will come through in the cake.

To get the full effect of this toasted masterpiece, you’ll need a culinary torch to toast the meringue. Trust me, I’ve tried with everything from matches to one of those lighter gun thingys and nothing will give you the look and taste of toasted goodness quite like a good culinary torch. You can use some piping tips to pipe unique designs with the meringue (I’ve used Wilton 4B for the open stars and 1M for the rosettes) or keep with the traditional look of swirling the meringue with an offset spatula before toasting to perfection. Whatever you decide for the final look, I can promise these flavors are sure to please.

Banana Nutella Birthday Cake

A moist banana spice cake topped with vanilla buttercream, drizzled with Nutella ganache, and finished with toasted meringue flourishes.

Ingredients

Banana Spice Cake

  • 3 cups (414g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 3/4 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1 1/2 cups mashed banana (about 3 large)
  • 3/4 cup (169.5g) unsalted butter, room temperature
  • 1 cup (205g) granulated sugar
  • 1/2 cup (94g) packed light brown sugar
  • 3 eggs, room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups (360ml) buttermilk, room temperature

Nutella Ganache

  • 1 cup (300g) Nutella
  • 3/4 cup (180ml) heavy whipping cream

Vanilla Buttercream

  • 2 cups (452g) unsalted butter, room temperature
  • 7 cups (840g) powdered sugar
  • 4 Tbsp (59ml) whole milk, room temperature
  • 4 tsp vanilla extract
  • 1/4 tsp kosher salt

Meringue Topping

  • 3 large egg whites, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 tsp cream of Tartar
  • 1 tsp vanilla extract

Instructions

Make the Banana Cake

  • Preheat oven to 350ºF and prepare three 6-inch cake pans by spraying the sides with cooking spray and placing a pre-cut wax or parchment paper circle in the bottom. In a medium bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt and set aside.
  • Mash the bananas by hand or use a stand mixer with a paddle attachment to whip them until they’re nice and mashed (about 30 seconds on medium). Set them aside.
  • Using a stand mixer with the paddle attachment, whip the butter until it’s fluffy and creamy, about 2 minutes, scraping down the bowl and paddle halfway through. Add the white granulated sugar and the brown sugar and cream on medium for another 2-3 minutes. Scrape down the bowl and paddle, turn the mixer to low, and add the eggs and vanilla before beating on medium for one minute.
  • Add the mashed banana and beat on medium for a full minute before scraping down the bowl and paddle again. Turn the mixer to low and alternate adding the dry ingredients in three additions and buttermilk in two additions, starting and ending with the flour mixture. Mix each addition until just incorporated before alternating. As soon as the last addition of the flour mixture is incorporated, turn the mixer off and give it a few stirs by hand to make sure there’s no flour lurking at the bottom of the mixing bowl. 
  • Fill the cake pans with batter no more than 2/3 full and bake for 45-55 minutes (baking times will vary). The cakes are done when they spring back to the touch and a toothpick inserted comes out clean. Cool the cakes in the pan for five minutes before turning out to cool on a baking sheet or wire rack for several hours. 

Make the Nutella Ganache

  • Measure Nutella into a heatproof bowl and set aside. In a saucepan over medium-high, heat the heavy whipping cream until small bubbles form (just before the start of a rolling boil), stirring constantly with a whisk. Once the cream begins to boil, remove the pan from the heat and pour the cream over the Nutella. Let sit for about 30 seconds before whisking together until the consistency is uniform and well blended. Let it sit at room temperature until it reaches room temperature. 

Make the Vanilla Buttercream

  • In a stand mixer with the paddle attachment, beat butter on high for until it’s fluffy and almost white in color, about 7 minutes, scraping down the bowl and paddle a few times during the process. Add the powdered sugar a few cups at a time and mix on medium until incorporated. Scrape down the bowl and paddle before each addition.
  • Turn the mixer to low and add the vanilla extract, milk, and salt. Beat on medium for another minute until well incorporated, scraping down the bowl and paddle as needed. 

Make the Meringue Topping

  • Whisk the egg whites, sugar, and cream of tartar together in a small heatproof bowl. Set the bowl over a saucepan filled with an inch or two of simmering water, making sure the bottom of the bowl doesn’t touch the water (or else it will cook your eggs!). Whisk the mixture constantly until the sugar has dissolved, about 4 minutes. 
  • Once the sugar has dissolved, pour the mixture into the bowl of your stand mixer fitted with the whisk attachment. Add the vanilla and whisk the mixture on high for 6 full minutes, until stiff peaks form. You should be able to dip the whisk into the meringue and it forms a peak that maintains its shape when turned right side up and upside down.

Assembly

  • Wait until Nutella has reached room temperature. Starting with your first cake layer, spread a good amount of Vanilla Buttercream as a filling and drizzle a little Nutella Ganache before placing your second cake layer on top. Repeat the process before placing the final cake layer on top.
  • Crumb coat the cake with Vanilla Buttercream and place in the refrigerator for 15-20 minutes to firm up before frosting with a final layer of Vanilla Buttercream. In the cake pictured, I colored a little Vanilla Buttercream yellow with food color gel and created an ombrè finish. Place the cake back into the refrigerator for another 20 minutes or more to chill before dripping with Nutella ganache. 
  • For the meringue topping, you can either use a piping bag with piping tips (I used Wilton 4B for the open stars and 1M for piping rosettes) or swirl the meringue onto the cake with a spatula. Feel free to get creative! Use a culinary torch to toast the meringue as a finishing touch.

Notes

The cake layers can be baked ahead of time and stored (wrapped in plastic wrap) for up to two days at room temperature, or up to three months in the freezer. 
The Nutella Ganache can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to drip consistency by microwaving in ten second spurts. 
The Vanilla Buttercream can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to room temperature and re-whip with your stand mixer. 
The Meringue topping must be made and torched on the spot.
